The Battle for the Dragon contest, which is endorsed by the World Association of Chefs Societies (WACS), was introduced for the first time in 2006. Winners to date have been Germany, Wales, Scotland, Sweden and New Zealand.
Every year, the Welsh Culinary Association invites two international teams to compete against the Welsh National Culinary Team at the Welsh International Culinary Championships, held at Coleg Llandrillo Cymru, Rhos on Sea.
The Battle for the Dragon competition, organised by the Welsh Culinary Association, is sponsored jointly by the Welsh Assembly Government to promote the Wales the True Taste food and drink industry brand, Unilever Food Solutions and Hybu Cig Cymru/ Meat Promotion Wales.
Each team is challenged to cook a three-course meal for 80 people in three hours under the critical gaze of a panel of international judges.
Such is the growing popularity of this contest that international culinary teams are lining up to receive an invitation. In 2012, Germany will be returning to Wales keen to repeat their victory of 2006, while the Welsh chefs are determined to retain the Dragon Trophy, which they won in 2011.
Italy complete the competition line up, as all three nations prepare for the Culinary Olympics in Erfurt in October 2012.
